1 onion, halved and sliced
1 pound mushroom, sliced
3 cloves garlic, minced
1 recipe Super Simple Seitan
1 cup soy yogurt
Saute the onion, mushroom, and garlic until onion is translucent and mushroom has released all its juices.
Add Super Simple Seitan and simmer until the sauce is reduced (around ten minutes).
Add in soy yogurt and serve over pasta of your choice. Salt and pepper to taste.
