2 large ripe bananas
1/3 cup brown sugar or sucanat
1/4 cup applesauce
1/4 cup oil (sunflower, safflower, or canola)
2 tablespoon molasses
2 cups flour (whole wheat or brown rice)
3/4 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
optional: dash of pumpkin pie spice
optional: a handful of carob chips or vegan chocolate chips
Preheat oven to 350 degrees F. Lightly grease a 9x5-inch loaf pan or muffin tin.
In a large bowl, mash the bananas well with a fork. Add applesauce, sugar, molasses, and oil, and mix well. Sift in the flour, baking soda, salt, and spices. Use a large spoon to gently mix all ingredients together. Fold in carob or chocolate chips (optional). Transfer the batter into the loaf pan or muffin tin. Place into oven and bake for 45 minutes for bread, or 20-25 minutes for muffins. Use a toothpick to pierce through the dough to see if ready.
This is an easy recipe, and the bread/muffin comes out nice and moist. It's not too sweet by itself. If you want to make it sweeter, add carob or chocolate chips and/or a bit more sugar.
