2-3 pounds baking sweet potato or yam
2 teaspoon of ginger powder
1/2 teaspoon grated orange peel
1/2 cup pecans, finely chopped
2 teaspoon of vegan butter or margarine, softened
1/2 tablespoon vegan salad dressing
1/4 teaspoon nutmeg
1/2 teaspoon ground cinnamon
1/2 sucanat or brown sugar
Bake the sweet potatoes in the oven until tender, and let cool slightly. Peel and mash. Mix sweet potatoes with the sweetener, ginger, and orange peel. Place mixture into a 1-1/2 or 2 quart casserole. Then, mix in the other ingredients. Bake for 25 minutes at 350 degrees F and sprinkle cinnamon and nutmeg.
