1 package firm silken tofu
1 package vegan vanilla, strawberry, or chocolate pudding mix
½ cup vegan cream cheese
¼ cup soy or rice milk
1 ready made pie crust
Preheat oven to 350F degrees. Prepare pudding mix according to instructions on package, and let cool. Blend tofu, pudding, vegan cream cheese, and soymilk thoroughly. Pour mix into the pie crust, bake for 30-35 minutes. Remove from oven, and let chill.
A delicious low calorie recipe for a rich cake.
