Ingredients
1 medium eggplant, chopped
2 medium zucchini, chopped
1 green pepper chopped
1 onion chopped
3 tomatoes chopped
30 ounce garbanzo beans, pre-cooked, rinsed and drained
9 ounce frozen artichokes, quartered
1 tablespoon oregano
salt, pepper, and red pepper flakes to taste
Instructions
Combine all ingredients in cooking pot and cook until heated through and zucchini is tender. Serve with rice, noodles, or couscous.
This was a phenomenal recipe. Even my picky children (10 and8 years old) loved it. We served it with Pita bread on the side.
I tried this recipe the other day. It was very good. I did modify the recipe by adding 2 Tbs of extra virgin olive oil to the pan. I also found I need to add additional seasonings (2 Tbs of oregano, about 2tsp of salt and pepper) I did also add red pepper flakes according to my taste. My husband and I like spice so it had a nice kick. Very easy to make and it was very filling. It made a lot so I will get a few meals out of it.
