1 large handful of noodles, any kind
1 tablespoon olive, sesame, or safflower oil
2 garlic clove, diced
1 scallion, finely chopped
2 tablespoon soy sauce
fresh cilantro or chives for garnish
Boil noodle according to package instruction.
Drain and let cool slightly.
Toss all ingredients in a bowl.
Sprinkle sesame seeds on top and garnish with cilantro or chives.

Can't go wrong with this one. It makes a good base for a noodle dish or add it to a salad. I like to use soba (buckwheat) and spelt noodles. Pour some peanut sauce or a sauce/dressing you have at home, and voila: a simple, wholesome, and delicious.
