1 cup vanilla soymilk
3 tablespoon all purpose flour
2 tablespoon agar flakes (you may add more if you want a firmer texture)
2 tablespoon diced mango (or any seasonal soft fruit)
2 tablespoon blueberry jam (or any jam of choice)
Herbs for garnishing
Mix together the soymilk, flour, and agar flakes in a small thick stainless pot.
Heat on stove top, stirring constantly until it boils. Simmer for about 2 minutes before turning off heat.
Pour on heat proof cup or bowl, let cool partially.
Top with diced fruit around on top and fill in jam in the middle. Top with a sprig of tarragon. Chill and serve.
