Ingredients1 cup white quinoa
1 cup red quinoa
1 cup black quinoa
OR - 3 cup quinoa same variety
6 cup filtered water
600 gram frozen mixed vegetable (carrots, peas, green beans, corn)
1 red pepper, diced
¼ pumpkin, grated
tamari, soy sauce, or Braggs Amino sauce to taste
InstructionsCombine all quinoa types (or one type) in a large bowl and rinse. Place quinoa in a large cooking pot with 6 cups of water, bring to a boil, then reduce heat to low.
Keep lid on. Quinoa is cooked when a white periphery forms around the grains
In a wok combine all the vegetables and stir fry until cooked. Add the quinoa mixture. Add sauce to taste.
This is a good dish to make for an event where you will be feeding a large group of people, or you could freeze the meal for later.
