1 courgette (zucchini)
1/2 red chilli
sea salt (use good salt)
Thinly slice courgette (zucchini) lenghtways - you could use a potato peeler.
Chop chilli and mint, place in a glass bowl, and add the garlic and olive oil. Cover and let the courgette soften and the flavors mingle.
Before serving sprinkle with salt and lime juice.
