Ingredients1 tablespoon olive oil
1 large onion
1 large tin/jar bell peppers(use fresh red and green and take seeds out)
2 teaspoon dried oregano
2 teaspoon ground coriander
1 crushed garlic clove
2 tins blackeyed beans
1 carton of seived tomatoes
1 tin chopped tomatoes
3 teaspoons of Tabasco sauce
1 teaspoon of sugar
salt and pepper to taste
InstructionsDice the onion and place in cooking pan with olive oil, and cook until onion is softened.
Add all the other ingredients bring, and bring to boil. Then simmer for 15 minutes.
Serve with torilla and Quark or baked potato.
Options: Use leftover fresh veggies from the fridge. Carrots give it a sweetness. Or add ground/loose faux meat to bulk it out.
