Vegetable Pulao


1 cup rice
2 cup water
2 tablespoon vegetable oil
1/2 tablespoon cumin seeds
1/2 big onion
2 tomatoes
1 potato
1/2 cup fresh/frozen cut green beans
1 carrot cut into small pieces
1/2 cup green peas
1 cup cut fresh broccoli
1/2 cup cut cauliflower
coriander leaves
Options: Add any vegetable according to your taste


Soak rice in a bowl of filtered water (for 10 minutes).

In a pan, heat oil, then add cumin seeds, and wait until mixture sputters or turns red/brown but not black.

Immediately add in cut onions and heat to reddish brown. Then add all cut vegetables and tomatoes, and cook for sometime until the veggies soften.

Add rice and water. Add salt and chilli to taste. Cook rice until rice softens, takes up to 10 minutes.

When rice is soft, garnish with cut cilantro, and serve hot.
