Gazpacho

Ingredients

2 tablespoon olive oil
3 cup tomato or vegetable juice
1 clove garlic, crushed
1 onion, minced
1 green bell pepper, minced
2 medium tomatoes, diced
1 medium cucumber, diced
2 tablespoon red wine vinegar
2 tablespoon lemon juice
1 teaspoon minced fresh basil
1 teaspoon dried tarragon
Pinch of ground cumin
Dash of hot sauce
salt and pepper to taste

Instructions

Combine all ingredients and refrigerate for 90 minutes. Serve chilled.
