1 teaspoon salt
1 teaspoon basil
1/4 teaspoon oregano
1/2 teaspoon black pepper
2 tablespoon wine vinegar
1/4 cup olive oil
1 head of lettuce, washed and dried
1 large cucumber, thinly sliced
2 large tomatoes, cut into wedges
1 small/medium red onion, chopped
1/2 cup Greek black olives
16 ounces firm tofu, cut into small cubes
InstructionsPlaced the tofu in a medium bowl.
In a separate small bowl, mix together dressing ingredients.
Pour dressing mixture over the tofu and marinate for 60 minutes.
Add cucumbers, tomatoes, onion, and olives to the tofu and toss.
Serve over the lettuce.
