Bread Pudding


2 cup soy milk
2 cup bread, cut into small cubes
2 liquid egg substitute (2egg equivalent)
1-1/4 tablespoon margarine
2/3 cup sugar
1/4 teaspoon vanilla


Preheat oven at 350F degrees. In a medium bowl soak bread in soy milk for 60 minutes. In a mixing bowl combine remaining ingredients, and add this mixture to the soaked bread. Pour content into a loaf pan. Place loaf pan inside another pan with water and steam in oven for 60 minutes.

Could I make this without margarine? I don't want to use Earth Balance because it uses palm oil.
