Ingredients2 pound whole wheat flour
1 quart water
InstructionsIn a large bowl, combine flour and water and mix thoroughly to medium-firm consistency. Let dough sit 50 minutes.
Place dough in colander under filtered water faucet and turn on the cold water.
Continuously squeeze dough to wash out starch from mixture. Keep dough intact in one piece during squeezing. Continue to rinse and squeeze for 10-15 minutes until all graininess is gone and water runs clear. Cover seitan with water until ready to use.
