I recently took a trip to Chattanooga just to do to the Country Life Cafeteria. And it was well worth the 2.5 hours drive from Nashville. The fully vegan buffet style restaurant was fantastic. It didn't even feel like a cafeteria. They had an excellent selection of dishes, namely pizza and a pot pie when i went. And the meny changes daily...if you visit their website you can get monthly emails with the menu sent to you. I also would check out the dessert selection while there. It is located right downtown so it is within easy distance to a lot of shopping and downtown museums.

The shopping area right around the restuarant was very cute and had some unique specialty shops. Be sure to go at a reasonable time as on a Sunday afternoon there wasn't much open to choose from.
