I used to live in Raleigh and as a vegan it was not very veg friendly at all. There were some good spots to hit...namely the Mellow Mushroom is always tasty and Las Margaritas on Six Forks rd is one of the best Mexican places and last time I was there they have updated their veg section to include some tasty dishes. There are some very quaint restuarants downtown that catered slightly to the veg lifestyle.

As for things to do...if you are into hockey be sure to attend a hockey game and see the Canes play. Also downtown offers some great bars and just places to hang out and meet people. There are some descent toursity places as well. They have a couple fo good museums...the history museum was suprisingly intersesting as well as the art museum..which is free for the genral exhibit but costs for the special exhibitions, which are normally pretty good and well worth the money.
