Just a brief run down if you are planning to come to the area (the Mayo clinic brings many people). Pho Hoa (excellent Viatnamese, with vegan summer rolls and mock duck curries), Cuisine Of India & India Garden (lots of veggie curries, very veggie friendly lunch buffet at Cuisine Of India), the food court at The Galleria Mall (no chains, includes veggie sushi & miso soup, Indian curries, and falafel), Fiesta Mexicana (wonderful vegetable burrito, but get it without the rice- it has chicken stock), Backroom Deli (fantastic & all vegan, in the back of a great co op), Three Happiness (Thai with mock duck items), and that's just the start- it's surprisingly veggie friendly.
