the folks at amazing grace were cool when I called to pick their brains about veg-friendly restaurants. The Hearth, next door, will create a veg entree. Apparently they just pop over to AG and get ingredients!

Breckenridge is a great area for vegetarians to visit. We anticipated having to go in to Denver in the middle of our weeklong vacation to stock up on stuff at Whole Foods or Wild Oats. Instead, we were pleasantly surprised to find that the grocery stores there stocked soy milks, cheeses and yogurts, as well as typical vegetarian frozen and prepared foods (we are partial to Amy's mac and soy cheese, spinach nuggets, lightlife foods).
In addition to the veggie friendly supermarkets, many of the restaurants there offered to substitute tofu in their meat dishes. Rasta Pasta, My Thai and The Prospector, all on main street, were the three restaurants that we tried and loved. Prospector had great Tofu Scramblers for breakfast.
