We lived here for 5 years (until 2007) and were always frustrated by the lack of options. There were only a handful of places we would want to eat out at which had more than one vege option.

Thai restaurants are always a good bet and usually have a vegetarian menu. There are only a couple mexican restaurants we found with a vegetarian beans. A couple Indian places. But that's about it. Downtown is particularly (disappointingly) void of vegetarian options. We were vegan when we first moved here, but predictably that disolved after a few years because it is incredibly difficult to be vegan in Alaska.
