El Salvador is definitely one of the most vegetarian friendly nations in Latin America (and, for both vegetarians and non-vegetarians, probably one of the best cuisines in Latin America as well). First of all, they eat a lot of refried beans, but unlike in Mexico, they're usually prepared without lard in El Salvador (using vegetable oil--"aceite vegetal"). Pupusas (which are stuffed cornmeal (or infrequently using rice instead of corn) patties) are everywhere, and there are many vegetarian varieties (and often can be made without cheese). Yuca and plantains are also quite common (eaten in a variety of ways--though do make sure if you get fried yuca that they don't add gravy). Mexican food is popular there as well (often with vegetarian options). Of course, like most tropical countries, there's a big variety of local fruits (plus, also like most tropical countries, El Salvador likes to import fruits from temperate climates, like apples and peaches). I've been fortunate to have visited El Salvador twice (once for fun, once for work)--hope I get to go back someday!

Friends: I recommend you the best solution for veggie lovers in El Salvador (including Suchitoto, and of cpurse, the cafe of my friend Roberto Broz) is PUPUSAS! Yu can enjoy pususas in different tastes: spinach, cabbage, a diversity of herbs like "papelillo", "mora", "cuchinita", beans or cheese (even you're vegan, you can choose a special pupusa without cheese, just ask the senora pupusera). Enjoy El Salvador!

OK I don't know if this is acceptable but since my last post my wife and I have opened a restaurant here in Suchitoto, El Salvador. We serve a variety of typical salvadorean foods as well as TexMex. Come by and try our gourmet pupusas(cheese with spinach, mushrooms, summer squash, jalepeņo and others) or our famous vegi burritos and tacos. I can also let you know where to stay and what to do in and around town. If you come just ask for El Rinconcito del Gringo or Roberto El Gringo. There are also many other restaurants here in town that offer some vegi plates.

If your coming to El Salvador, Suchitoto is a must see, plenty of restaurants(although not any vegitarian) most have veggi dishes or are willing to prepare something special.
