Precious H2O - Did you know that water is the most important of the six basic nutrients the human body needs, along with carbohydrate, fat, protein, vitamins and minerals? We can survive months and even years without some vitamins and minerals. But without water, we last just a few days. Our bodies are mostly water. There is water inside cells and in between cells. There is water in our blood, in our joints, and in our digestive tract. Babies' bodies are about 85% water. Adults are about 60% water.
Though many might think of water as an infinite resource, the truth is that water is an increasingly limited - and highly critical - resource. Did you know that only 2.5 percent of Earth's water is considered fresh water? Of this, only 3/10 of 1 percent is available to us via lakes, rivers, and streams. Did you know that 1.1 billion people worldwide lack access to safe drinking water?
How can we do our part to conserve water? Here are a few ways: Eating less meat helps conserve water! Producing one hamburger patty requires as much as 2,900 gallons of water (Cornell University). Turn off water while brushing your teeth. Install a low-flow toilet. Take short showers instead of baths. In the yard, plant drought resistant plants.

New benefits of a vegan diet revealed. Sufferers of rheumatoid arthritis may benefit from a vegan diet, according to new research conducted at Sweden's medical university, the Karolinska Institute, funded by the European Commission. A gluten-free vegan diet was found to reduce cardiovascular risk factors in people with the disease. The effect was observed in a group of rheumatoid arthritis patients that adhered to the diet for a year and exhibited a decrease in low density lipoprotein (LDL) and oxidized LDL levels, as well as raised atheroprotective natural antibodies against phosphorylcholine (anti-PC).
