For how long have you been a vegetarian and what lead you to this field of service?
I am a self-taught vegetarian chef for 5 years, and my restaurants have been in business for 4 years. I was raised vegetarian and found it difficult to find restaurants to eat at in Albuquerque. I also wanted to put out the concept of Ayurvedic food i.e. fresh, organic, and balanced.
What inspires you to create?
I am inspired by the fact that my restaurants cater to a population that is looking for a "healing cuisine." I create menus and dishes built around the fact that people need to eat real food from natural sources as opposed to eating the flesh of dead animals.
What's the most popular or interesting item(s) you offer?
Our food is made from scratch daily with whole grains and fresh vegetables taking into account a broad range of allergies, hence we are very meticulous in choosing ingredients for the various menu items that are gluten free, dairy free, and sugar free and any other way that we can free you.
What would you say to help someone understand vegetarianism & health?
Your stomach is not a place for dead animals.
