Reasons why I prefer to eat vegetarian or vegan:
I switched to a plant based diet due to health issues. Switching over to a plant based diet has been a great process as I'm relearning everything I thought I knew about food.
I joined HappyCow Members Community because:
I started a new business that caters vegan lunches as well as provides vegan treats for special occasions and want to spread the word.

I've been fortunate in my previous career to have travelled globally and experienced many different cuisines. I still have a long list of places to experience though, with Italy at the top of my list.
Some of my favorite veg*n foods include:
My all time favourite vegan recipe is the simplest, yet so yummy. pasta with olive oil, roasted tomatoes, spinach, toasted pine nuts, garlic, onions and some nutritional yeast. Maybe it's because I came up with it...but it's my go to comfort dish. My other favourite vegan item is dessert! My passion is in desserts and I have a huge sweet tooth to go with it. I recently developed a vegan black forest cupcake that I love; along with my Christmas yule log...yummy.
Here are some books, movies, magazines, and my favorites that I would recommend to other HappyCow members:
Any cook book, even non vegan ones. Magazines includes Vegetarian Times, Delight (A gluten free magazine), and books about chefs (their memoirs). I highly recommend "Yes Chef" by Marcus Samulesson. It's a great read. From a business perspective, I recommend "The Tipping Point" by Malcom Gladwell. I believe plant based diets are reaching the tipping point as more and more people make the switch.
