More About Me

Reasons why I prefer to eat vegetarian or vegan:
Was vegetarian for years. Once I researched dairy cows, and whether or not they were treated humanely, I became vegan over night. I have no patience for those who prefer to live with their eyes wide shut, as I did for so many years.

I joined HappyCow Members Community because:
I'm vegan. I'm a foodie. I love to eat out. Did I mention I live in the Deep South? Vegan alternatives are not exactly easy to find around here. ... Enter Happy Cow! A life saver!!!

Here are some places I've been that I liked... and places that I would like to visit one day:

Some of my favorite veg*n foods include:
Bueno Foods frozen New Mexico Green Chile (cannot live without it!) I just discovered daiya block style MELTY vegan cheese:) Amy's Organics does a fantastic roasted veggie pizza without cheese. Candle 57 does a frozen vegan Mac & Cheese, available at WF. Vegetarian Plus does a great frozen vegan Kung Poa "Chicken". Amy's Organics frozen Tofu Scramble (I make a killer red chile and use this to stuff my smothered breakfast burritos;) The Vegg!!! Love it! Can't get enough Nutritional Yeast...popcorn...pasta...toast... DaVinci Spinach Nests (yummy with Olive Oil) California Ranch Olive Oils (Arbosana is my fave:) Homemade cashew cream sauce. Bocca crumbles and Gardien Veganaise Zataran's Creole Mustard Kuner's of Colorado black beans ...etc...etc...

Here are some books, movies, magazines, and my favorites that I would recommend to other HappyCow members:
One of my absolute favorite cookbooks is "The Conscious Cook" by Tal Ronnen. Seriously, I didn't know how to cook before becoming vegan (overnite). This book has me cooking like a bonafide French Chef! My second would have to be "easy INDIAN Cookbook" by Manju Malhi. It has meat recipes, but you can easily substitute and make all your favorite Indian foods...VEGAN:)
