I am very sorry to readabout your really bad experience at Spisestedet in March this year. Hopefully it's not as bad normally as you describe it in your review.

It seems to me that you've been ithere at a really bad day.

Moulded bread, not excuses there. It shoulden't be possible

Dirty and introvert chef. It might have been one of those days. As the chef I really try to change clothes every day and I know I'm not always the best communicator around.

For the place being dirty there's no excuse but to guess it's been a bad day.

To manage to survive we have to let the place to some clubs after closing time. There's a chess club on Thursday and sometimes they partying into the small hours. I try to be early in the days after to clean the place up and to get as much fresh air in as possible.

Then you go on of you not trusting what's going on in the kitchen, insinuating either a/ the food is not organic b/the food is not vegan c/the food is made solely for profits, with no care.

To this I can only say that I love to make vegan food and that I am heavy into organic food. If the profit should be the motive I would have changed the cafè into a normal one. there's not much money in either vegetarian or vegan food in Norway. Maybe that's why all reastaurant that try goes bancrupt.

I really hope you visited on a really bad day for both me and the restaurant, and that it's not the norm.

You probably managed to stop any foreigners from trying it out as they tend to read happy cow before going somewhere.

In the end I can only say I'm really sorry and that I deserve to be slaughtered when not being up to scratch.

If you print this and bring it to us on another visit to Oslo, I will give you a free meal and you can see for yourself if it's as bad as you wrote
