I was in Sweden last this past Nov -- I love it there too!
Even though I'm from LA, for the past 6/7 years I've only been "sort of" living there -- I've been mostly travelling overseas, coming home only for short periods of time in between travels (I was working on a cruise ship).
And now I'm actually living in Barcelona(which has a surprising amount of veggie places, for such a ham-obsessed culture!), so I'm not really the best person to ask, but I can tell you my favorite restaurants in LA ... Rahel's Ethiopian is actually one of my favorite restaurants in the world -- food is fantastic!
Elf Cafe on Sunset is great, and has a very good vibe. You should check out Pure Luck too -- the energy there is good too, and is near LA University & full of young people, so you might be able to ask there about activist groups, etc.
I like Shojin in Little Tokyo too - mostly for the friendliness of the staff
For food shopping, the best places for fresh produce are the ethnic supermarkets (Koreatown has some fantastic ones). There are lots of farmers markets too, with great stuff, but they're kind of expensive.
I wish you all the best & hope you love LA!
xoxo
