My husband and i are vegetarians, yogis, and spiritually oriented individuals ourselves...

Lotus Cafe is only 4 months old and is a very new cafe. There are laminated menus behind the front counter on which i have carefully noted by hand the vegan options until we get new menus printed. (There is also a gluten-free version.) Please ask to see these at the front counter. Apologies for not having them available at the inception of opening the cafe, as had been our plan, but we were sourcing still some suppliers at the time the menus went to print and we very earnestly wanted the vegan menu to be completely accurate. Thank you for your patience.

The Nirvana Burrito which you mentioned, is made with sauteed fresh veggies, pinto beans and organic brown rice wrapped in an organic whole wheat chapati, topped with our homemade ranchero sauce, cheese (vegan cheese available), sour cream, and our homemade guacamole. It comes with a side salad with one of our fresh made-from-scratch salad dressings, for $8.75. The organic ingredients do cost more than conventional, but we still try to keep our prices low and do not take the standard mark-up that most restaurants do, to keep prices affordable for customers.

The Tempeh Tacos are made with 95% organic tempeh with our homemade ranchero sauce with non-GMO corn tortillas with cheese, organic lettuce, and organic sprouts, and they come with a side of organic blue corn tortilla chips and a side of our fresh, made from scratch salsa. The corn tortillas are fresh and come from a local tortilla maker; We get tortillas delivered 6 days a week along with our fresh produce. The Tempeh Tacos are $6.95.

Our chefs cook with love and they do heat the cheese; as you must know, the vegan Follow Your Heart cheese does not melt very readily, the cooks do heat the vegan cheese to try to get it as close to melting temperature as possible... it does burn easily... It is not our normal mode of operation for the cheese to be cold; perhaps there was a mistake in the kitchen. Our apologies. You mentioned this order was to go, and if there was a delay between the time it was prepared and when it was eaten, is it possible it

could have cooled down during that time interval? In any case, if the matter had been called to our attention, we would have worked with you immediately to remedy it. I have already spoken to our kitchen staff about your complaint immediately after reading your review.

We are a new cafe, with an all new staff, and many of our staff is still training... If mistakes are not brought to our attention, there is no way to address them directly... and we are always seeking to be better.
