The best way is to get some vegan books out of your local library or search the net.
But I have found that just a good basic vegie and bean stew or soup is a good place to start. Because you can make a large batch and freeze small portions for other mealtimes.

I am new to being Vegan and am finding it fairly easy to transition over. This morning I made my first vegan waffles in my waffle maker.
Just used 1/2 cup each of white flour & wholemeal flour, a teaspoon of brown sugar and then added soymilk and a bit of water to make to the right consistency. Tasted great and I had them with proper Maple Syrup.
