Congratulations on deciding to go veg! If you can stick with it, this will be one of the best decisions you've made in your life. You will live longer and be so much healthier. Now the fun of making the transition begins! You're making a lot of changes at once, and that's great, but try not to feel overwhelmed. You can do this.
My first thought after reading your post is...do you have a Whole Foods or a store like that near you? If so, it'll make life much easier for you since they'll have everything you need.
Soy milk is awesome. Don't forget about almond and coconut milks. Hemp milk is also super good.

There's many other brands, Earth Balance is just my fave. Like I said, go to Whole Foods and you can try all the different brands and find the one you like most.
Mayo. You didn't ask about this but I'll tell ya anyway. A company called Follow Your Heart makes the *best* mayonnaise you've ever had. I would buy this stuff whether I was vegan or not. It's called Vegenaise: [

Cheese. Here's where things might get tricky for you. Yes, there are all kinds of non-dairy cheeses. However, in my opinion, there is no product on the market yet that tastes just like cow's cheese. So if you're looking for an exact replacement, don't get your hopes up. That said, the non-dairy cheese that's the closest to cow's cheese is called Daiya cheese. It melts and is great on pizzas. Then there are all kinds of nut cheeses and other products. Try Daiya first.
