Hi everyone and welcome to the new members!
I've just come back from a fantastic 5 days in central France - in the Limousin region. I've been there many times and in the past I really struggled to find vegetarian food. To my delight two years ago a friend introduced me to a restaurant in a tiny village, run by a Canadian chef and his British wife, where vegetarian food is a speciality. It's not a veggie restaurant but Greg probably makes some of the most imaginative veggie food I've ever eaten. There are always two veggie options on the main menu plus a veggie dish of the day. That might not sound like much but in France it's a miracle!!
I was there on Tuesday evening and enjoyed a tomato, feta and chickpea salad which had the most incredible dressing on (secret recipe), then a tower of aubergine, courgette and squash, with a herby cream sauce, with a side dish of still slightly crunchy lightly-steamed cauliflower, fresh green beans, baby carrots and the most divine "boulangére potatoes". If you've never heard of those, Google them! Delicious and I'll be trying to make them myself very soon. I had a hard time deciding between the cheese board and dessert (I was too full to have both) but I plumped for the cheese board. Wow. Six cheeses which three of us polished off in minutes!
