I'm not a raw foodist yet but working towards it. I am about to buy my first dehydrator (Excalibur) and am wondering what accessories I need to buy with it. I know that answer is dependent on what all I plan to use it for, however I don't know for sure since I have never used one and have not started the raw food diet yet. So I'd like to hear from others what accessories/supplies they find the most useful. I am considering the 9 tray (I will be the only raw foodist at my house) because I thought it would be helpful to store things for the winter since i live in a northern climate. Am I going overboard with 9 trays? Sorry that's several questions, but any advice is appreciated.

Buy the 9 tray for sure! Other raw fooder essentials are a high speed blender. I prefer the Vita-Mix. A food processor and a really good sharp knife. That'll get you started.

I think the Excalibur comes complete with everything you require - the mesh sheets, the paraflex sheets, etc.

parchment paper! if you're going to make any sort of 'breads', crusts, etc.. you're going to need something to hold it together before it dries!
