you consider dehydrate food as raw?
January 10, 2009 02:29AM
as I am raw chef (alisha cohen) school i have to say i don't consider dehydrate food as "real" raw food...better than cooking yes but not as fresh as real raw. Most raw foodist?s I know don?t eat dehydrate food more than 2-3 times per week and mostly eat simple crackers or bread in small quantities. The reason to be raw is to get maximum nutrition?s and enzymes from the food, the 100% you can get is better.

I work with raw chefs and educators at my school (retreat) and while we don't encourage people to eat a huge amount of dehydrated foods I still think it's better than overcooked regular foods. I have many raw friends and most eat some dehydrated food and even some of the most hard core well known raw foodists out there even eat cooked (gasp!) food. Remember as most schools teach 80/20 is optimum.
