It seems everywhere (atleast every health food store) I go, there's a new fad for chia seeds. Even the smallest little cute health food stores in who-knows-where (Gatlinburg, TN) has a container of chia seeds sitting on their shelves.

So what's up with the chia which we grew up seeing on TV sprouting into some cute little pet you can put in your window sill?

Well, historically speaking this seed was used among the Aztecs in ancient times as a monetary exchange or a high energy food. They would simply bring chia seeds as their food on long journeys (from Colorado River to California long) or on conquests.

Studies now show that chia is one of those super duper foods that everyone should be having. It's great for appetite suppressor, helps lower blood sugar for diabetics, high in Omega 3 (even more than flax seeds), helps with endurance and high energy food. These are just to name a few. I always recommend to research, research, research.

The best way to have chia is in gel form. Recipe that works best is 1T in 3oz water stirred rapidly to make sure its mixed up well. Let stand for about 1 minute, then shake, shake again and leave alone. You should get a nice gelatinous form. For those who can stand anything jelly-like (okra, eggplant cooked, etc.), I like to chop up some fruits (pineapple, mango, berries, etc), then add the chia gel with some coconut milk and honey. I leave this little fruit salad over night and in the morning I have this delightful fruit salad that has this nice taste to it because of the coconut milk marinade. I hear its what you call an ambrosia salad.
