HELP ME!!

Hi Guys-
I have a quick question and need all the help I can get.
I am a wife, mother of 2 and a full time career woman. I recently went Vegan because Vegetarian was just too easy for me.
Problem is....I am eating WAY to many starches and I am going to turn into RICE!!
I get home late and I dont have time to really fix a full on meal for me AND the rest of the family. Is there anything that I can do that is quick and cheap for meals that still is Vegan??

Well, eating late at night is not too healthy ;-)

I would recommend Quinua; it?s becoming easier to find it in normal supermarkets.

Quinua is a superfood full of proteins and minerals, a real whole meal. It?'s very easy to prepare (15-20 min max) and it stores well in the fridge.

If you prepare a large portion during the weekend, you can make very quick, tasty, and healthy dishes when arriving home; you can also prepare quinua burgers very easily.

It?s definitely much better than rice; it's really nutritious, and not starchy at all!

Will keep thinking on options!

Hi Keishada,

I'm a busy mom, too. Here's a few practical suggestions for cheap and quick hearty meal ideas:

You can make a giant bowl of hearty salad fairly quickly. You wash and place your salad greens in the bowl, then perhaps add a some chopped carrots or bell peppers, baby tomatoes, avocado, or whatever you have. Toss with salad dressing and serve with whole grain bread or pita.

You could change up the salad by adding a scoop of cooked grain such as brown rice or quinoa or couscous to each person's plate. Or you could add a scoop of cooked beans instead of grain (pinto, garbanzo, navy, black, etc.).

To make things easier, you can cook a large pot of beans and a large pot of grains on the weekend. Then divide them into daily portions and store them in sealed glass containers. Store in the fridge or freezer. When it's time to make dinner, just grab a container and heat it up (I use a rice cooker/steamer).

Ingredients to keep handy:
fresh whole grain bread or pita
fresh salad veggies
things you like to add to the salad (carrots, avocado, croutons, etc.)
a couple different salad dressings
a couple kinds of bulk dried beans
a couple kinds of bulk grains (brown rice, quinoa, couscous)

Hello Keishada,

what my kids like and I treat myself to every day is a frseh fruit smoothie or 'Green Smoothie' ...

Just cut some fresh fruit (Pear, peach apple, watermelon) to chunks, throw it into a blender with either fresh juice or just some water or ice, and blend it thoroughly. Works best if you have a high-power blender like Vita-Mix or Blendtec.

For the 'Green Smoothie', also add up to 50% greens - salad, spinach, cucumbers, leafy vegetables or else. It will not be as sweet and fruity as the fruit smoothie (hence possibly a bit harder for the kids to swallow), but nevertheless very enjoyable and incredibly healthy.
