The best way is to get some vegan books out of your local library or search the net.
But I have found that just a good basic vegie and bean stew or soup is a good place to start. Because you can make a large batch and freeze small portions for other mealtimes.
Also veggie burger patties. The recipe out of the Vegan Bites for singles is really good. But you can find similar on the net. You can just about put anything in them, including vegetables, oats, sauces, spices, garlic, onion, etc.
