Here's another recipe I "vegetarianized" for my husband, Vartan.
4-6 cups cooked black-eyed peas
small can of tomato sauce
dried lemon (limon omani in Iranian stores)
1 red onion
Pinch of sugar
Salt and pepper
Juice from 1 fresh lemon, a bit of lemon zest ( for added zing and freshness which is how my husband likes it)
Saute onion in olive oil until it's caramelized, and then add tomato sauce with a bit of sugar. Saute for about 10 minutes to take away tinny taste. Add remaining ingredients and heat for about 30 minutes until flavors mingle. Adjust liquidity with hot boiled water to make it stewy. Serve over rice. Shod hamovar e!
