I have a great one for Boston Baked Beans
You need 1 pound of dry navy or northern beans, onion, salt, molasses, water, dry mustard, brown sugar (or your fav sweetner, i like agave nectar), and pepper

Rinse and then soak beans overnight in 8 cups of cold water. Do not drain, but add 1/2 tsp of salt to beans and water and bring to a boil then simmer for 1 hour .

Drain beans over a bowl to collect the cooking water. Pour beans into a bean pot or 2 1/2 qt. casserole dish. Add chopped onion (here you would add salt pork, but because this is vegetarian you can add either a couple pats of butter or a couple tbs. of leftover cooking fat (like coconut oil).
Set aside.

Add to 1 cup of cooking water, 1 tsp. dry mustard, 1/3 c of brown sugar (or sweetner of choice), 1/2 c molasses, 1/2 tsp salt, and the pepper (about 1/8 tsp), Reserve remaining liquid in case you need it during cooking.

Pour the molasses mixture of the beans and stir. Cover and bake for 2 1/2 hours in 300 degree oven.
If beans need more water during cooking use the leftover liquid.

Enjoy!! They are soooo good with brown rice and some vegies.
