Bolivian Vegetarian Recipes

As you may know, Bolivian cuisine almost lacks for the vegetarian recipes so I am trying to change this by letting the people know that if you stay in Bolivia, you can also keep vegetarian!
1 pack of heart of palm
1 small bunch of bolivian cilantro
2 tablespoon vegetable oil
3 tablespoon vinegar
Cut heart of palm into circles and put them in water with salt for a few minutes. Cut onions, tomatoes and chili into stripes and mix with heart of palm. Add oil, vinegar, cilantro, salt, pepper and just a little of sugar
Serve with lettuce garnish.
Tip: Bolivian cilantro is also called “quirquiña”
