So what now?

I found this forum because today I finally made the decision to go veggie. I dont know how long I will last but I figured I have a better chance if I find some like minded people and some advice...
So my first question is what the h*** am I gonna eat now??? My time and skills for cooking are limited to say the least, and I live in an area where ready meals and meat substitutes are not an option, so I will have to go cold turkey..or should i say cold lentils... bet that ones been done before!
Any motivational advice much appreciated,

First don't let it scare you that it is about "Reversing Diabetes" by Neal Barnard. The book is filled with all sorts of reasons why we humans need to be free of animal products including animal FAT!
I'm diabetic. I bought the book on Amazon.com and I absolutely have a real reason to enjoy my new lifestyle of eating.
I agree with you that it is great to have friends who know what you may be going through in your desire to be so much healthier!

Welcome to the veggie lifestyle. I know it can be intimidating wondering what to eat when you make a change like this but it's really quite easy. When I went veggie I discovered all sorts of new foods and tastes. We're raised to think meat is the center of a meal when there are really so many different kinds of veggies, fruits, grains, beans, and other plant foods that you'll never run out of options, and never miss meat.
When people ask me what, why, and how about my diet I often refer them to one of the many websites that have tons of information about veggie nutrition, recipes, animal issues, and so on. These should provide you plenty of info to start:

The pieces of advice I always give new veggies is to make sure you eat healthy and to remember the animals you are saving. This will allow you to feel good about your decision in both body and mind and keep you motivated to continue. Good Luck.
Beans are a great substitute for meat. I love garbanzos and put them on salads and make hummus in my blender with garbanzos, a little oil, garlic, and whatever veggies I feel like putting in with it. You can also blend white beans in your blender with a little oil, tomato, and liquid smoke, and put this inside tortillas for cheese-free quesadillas. Also, lentil and potato stews can never steer you wrong. If you're new to cooking dried lentils, they are pretty easy, because unlike other dried beans they don't need to soak, and you can cook them up in about an hour. Another easy recipe that's a standby for me is pearl barley and vegetable soup. It takes an hour or so to cook but requires minimal attention, so you can put it on the stove and don't need to babysit it.
Other great things: risottos (although these take some work), tofu and veggie stir frys, vegetable curries, quinoa (soooo good!)...there are so many options.
I will admit though when I first went vegan that there were some new foods I tried that I really hated, and some dishes I tried to cook that were disasters. At the beginning there will be some trial and error, but you are guaranteed to discover some delicious new foods!
