Meatless Mondays: Brown Rice with Tempeh and Macadamia Nuts

Here’s another Meatless Monday recipe to tantalize your taste buds and get you cooking this cruelty-free meal in your kitchen. This week’s Meatless Monday recipe is contributed by our friend, Leigh-Chantelle from Viva la Vegan! a website with a large range of vegan recipes that focuses on positive information, education and vegan outreach.

Ingredients:

1 cup brown rice
3 cups filtered water
2 field mushrooms, diced
1 bunch of spinach, shredded
2 garlic cloves, diced
1 onion, diced
150gr tempeh, diced
1 cup chopped macadamia nuts

Method:

Cook the brown rice and filtered water in saucepan until cooked
In wok, sauté garlic and onion
Add the mushrooms, spinach and tempeh
Stir-fry until cooked
Add the macadamia nuts and cooked rice

Serves 3-4 people
