As Dubai becomes more international and upscale, it is possible to get a vegetarian dish in just about any restaurant (Lebanese and Middle-Eastern restaurants, in particular, often have an excellent variety of vegetarian mezze). However, those who wish to stick to vegetarian restaurants need not fear--as long as you like Indian (particularly South Indian) food. Saravana Bhavan, the international South Indian chain, serves high-quality fresh South Indian food at at least four locations in Dubai with additional locations in the other Emirates--and they deliver for free to all hotels! In addition, there are many other South Indian vegetarian restaurants. All of them are astoundingly inexpensive, and vegan food is readily available--they are really your best bet in Dubai and the UAE. These restaurants also serve some North Indian and Chinese (Indian-Chinese) vegetarian food.
There are many other South Indian vegetarian restaurants in the Karama area ("little India") and scattered throughout Dubai (Bur Dubai, Deira, etc.). Most of them advertise "100% pure vegetarian" or something of the sort prominently on the outside of the restaurant. Because over 50% of the population of Dubai is from the Indian Subcontinent, it should not be too difficult to find an Indian person (almost any taxi driver or hotel staff, for example) to ask where to get good vegetarian food.
